Maria's Stuffed Chicken Breasts

Spinach and ricotta-stuffed chicken breasts, baked in rich spaghetti sauce.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1 (15 ounce) container ricotta cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 clove garlic, minced
  • 2 eggs, beaten
  • 1 (8 ounce) package shredded mozzarella cheese, divided
  • 1 (16 ounce) jar spaghetti sauce
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Season chicken breasts generously with salt and pepper. Make a slit on the side of each breast for stuffing and set them aside.
  • Mix creamy ricotta, flavorful spinach, fragrant garlic, eggs, and most of the cheese in a bowl. Fill each chicken breast with a quarter of the mixture, secure with toothpicks, and arrange in a greased 9x13 inch baking dish. Cover with sauce and a sprinkle of the remaining cheese for ultimate deliciousness.
  • Roast the chicken at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until fully cooked and juices are clear.
