Whip up a flavorful marinated artichoke salad with bocconcini and capsicum.
Ingredients:
  • 340g jar marinated artichoke hearts
  • 100g snow peas, trimmed, thinly sliced
  • 1/2 x 220g tub baby bocconcini, drained, halved
  • 80g mixed salad leaves
  • 1/2 small red onion, thinly sliced
  • 180g capsicum
  • 20.00 ml chopped fresh oregano leaves
Instructions:
  • Separate the artichoke hearts and save 1/4 cup of the marinade. Slice the artichoke hearts into quarters.
  • Combine snow peas, bocconcini, salad leaves, onion, capsicum, oregano, and artichoke pieces in a bowl. Drizzle with the reserved marinade, toss gently, and serve.
