Ingredients:
  • 5 yellow capsicums
  • 9.20 gm olive oil
  • 18.20 gm extra virgin olive oil
  • 1 garlic clove, halved
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • Preheat the oven to 180°C. Arrange the capsicums in a spacious baking dish. Drizzle with olive oil and mix well. Roast for 50 minutes, flipping halfway, until the skin is charred and blistered. Then, place in a bowl, cover with plastic wrap, and let it cool for a bit.
  • Prepare the capsicums by removing the skin and seeds, then slice the flesh into 1cm-thick strips.
  • Combine the capsicum with extra virgin olive oil, garlic, and parsley in a bowl and toss gently until mixed thoroughly.
