Elevate lemon curd with tropical coconut oil in a simple 5-ingredient recipe made in a double boiler.
Ingredients:
  • 3 eggs
  • 0.5 cup coconut oil at room temperature, thinly sliced
  • 0.5 cup white sugar
  • 1 lemon, juiced
  • 1 pinch salt
Instructions:
  • Fill a saucepan with water until it reaches about 1 inch up the side. Simmer over medium-low heat.
  • In a large bowl, whisk together eggs, coconut oil, sugar, lemon juice, and salt. Place the bowl over a saucepan of simmering water, ensuring it doesn't touch the water. Cook while whisking continuously until the mixture turns into a smooth pudding-like curd, about 6 to 8 minutes.
  • Transfer the curd from the saucepan to a bowl, keep whisking until slightly cooled for 2 to 3 minutes. Cover with plastic wrap and refrigerate until cold and slightly thickened, approximately 1 hour.
