Crispy fried shrimp coated in spicy mayo for the ultimate party appetizer.
Ingredients:
  • 1.25 cups mayonnaise
  • 0.625 cup Thai sweet chili sauce
  • 7.5 dashes chile-garlic sauce (such as Sriracha®), or to taste
  • 2.5 pounds peeled and deveined shrimp
  • 0.5 cup cornstarch, or as needed
  • 2 cups vegetable oil for frying, or as needed
  • 4 lettuce leaves
  • 0.25 cup chopped green onion, or to taste
Instructions:
  • In a large bowl, mix together mayonnaise and chili sauce. Stir in chile-garlic sauce.
  • First, lay out a generous layer of cornstarch in a wide dish. Next, firmly press each shrimp into the cornstarch to ensure a delicate coating.
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • Fry shrimp in batches until cooked through, around 5 minutes each; drain on paper towel.
  • Mix the mayonnaise sauce with the shrimp in a large bowl until shrimp are coated in the sauce.
  • Place a bed of crisp lettuce leaves in a bowl. Fill the bowl generously with succulent shrimp, and top it off with freshly sliced green onion for a vibrant finish.
