Flank steak bites in creamy green pepper sauce over egg noodles.
Ingredients:
  • cooking spray
  • 2 pounds beef flank steak, cut into bite-size pieces
  • 2 green bell peppers, seeded and chopped
  • 1 (10.5 ounce) can condensed beef consomme (such as Campbell's ®)
  • 1 (10.5 ounce) can condensed French onion soup (such as Campbell's ®)
  • 1 (8 ounce) package egg noodles
  • 1 (16 ounce) container sour cream
Instructions:
  • In a well-oiled large skillet over medium heat, sear the flank steak and green peppers until the steak is golden brown, approximately 10 minutes. Transfer everything to a large saucepan and add the beef consomme and French onion soup. Bring to a boil, then reduce heat, cover, and simmer for about 1 hour and 20 minutes until the beef is tender. Remove from heat.
  • Bring a large pot of lightly salted water to a vigorous boil. Add the egg noodles and cook until al dente, about 5 minutes. Drain in a colander.
  • Incorporate the sour cream into the meat mixture until it's perfectly mixed, then serve over the cooked noodles.
