Marranitos: Spiced Mexican gingerbread pig-shaped cookies with molasses and brown sugar, perfect for holiday festivities!
Ingredients:
  • 1.25 cups packed brown sugar
  • 0.25 cup shortening
  • 1 egg
  • 0.25 cup milk
  • 1.5 teaspoons vanilla extract
  • 1 cup unsulfured molasses
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons ground cinnamon
  • 6 cups all-purpose flour
  • 1 egg, beaten
Instructions:
  • Preheat the oven to 350°F (175°C) and line cookie sheets with parchment paper.
  • In a large bowl, use an electric mixer to blend brown sugar and shortening until smooth. Add 1 egg, milk, and vanilla, then mix until smooth. Fold in molasses, baking soda, and cinnamon. Gradually incorporate flour until the dough is firm enough to roll.
  • On a lightly floured surface, roll out the dough to 1/4 inch thickness. Use a pig-shaped cookie cutter to cut out the cookies. Place the cookies 2 inches apart on baking sheets. Brush the tops with beaten egg for a shiny finish.
  • Bake in the hot oven until puffed and edges are golden brown, approximately 15 to 17 minutes. Allow to cool briefly on the baking sheets; enjoy warm or move to a wire rack to cool completely.
