Delicious dessert with marshmallows, coconut, and jam.
Ingredients:
  • 70.95 gm caster sugar
  • 85.00 gm desiccated coconut
  • 250.00 ml plain flour
  • 150g butter, melted
  • 217.80 gm strawberry jam
  • 375g marshmallows
  • 3 weet-bix, crushed
Instructions:
  • Preheat your oven to 180C or 160C fan. Grease an 18 x 28cm slice tin with oil and line it with non-stick baking paper, leaving some paper overhanging on the two longer sides. In a large mixing bowl, mix Weet-Bix, sugar, coconut, and flour and create a well in the center.
  • Combine the melted butter with the dry ingredients until evenly moistened. Transfer the mixture into the prepared tin and use the back of a spoon to press it into an even layer. Bake the base for 25-30 minutes until it turns golden brown.
  • Spread warm slice base with jam, top with marshmallows, and bake for 7 minutes until softened. Allow to cool in the pan, then cut into squares before serving.
