Martha's almond grape tea cake

Martha Stewart's grape tea cake: stunning and delicious with a mix of red and green grapes.
Ingredients:
  • 150g unsalted butter, softened
  • 3 large eggs
  • 125.00 gm almond meal
  • 0.60 gm salt
  • 250.00 ml plain flour
  • 1 1/2 tsp finely grated lemon rind
  • 12 grapes, halved crossways
Instructions:
  • Preheat your oven to 180C/160C fan-forced and lightly grease a 5cm-deep, 9cm x 19cm loaf pan.
  • In an electric mixer, whip together butter and 1/2 cup sugar on high speed for 3 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition and scraping the sides of the bowl as needed.
  • In a medium bowl, mix almond meal, salt, flour, and the remaining sugar. Using an electric mixer on low speed, blend the almond mixture into the butter mixture until combined. Stir in vanilla and lemon zest.
  • Pour the batter into the prepared pan and level the top. Arrange grape halves, cut-side up, in neat rows on top of the batter. Bake for 55 minutes to 1 hour or until a skewer inserted in the center comes out with a few crumbs attached (if it browns too quickly, cover it loosely with foil). Let it cool in the pan on a wire rack. Once cooled, take the cake out of the pan and slice to serve.
