Martha Stewart's innovative ice cream recipe features dessert inside - pure genius!
Ingredients:
  • 4 large egg yolks
  • 356.90 gm caster sugar
  • 427.45 gm milk
  • 568.13 gm pure cream
  • 390.00 gm mashed over-ripe banana
  • 4.40 gm vanilla extract
  • 2.40 gm salt
  • 62.50 gm water
  • 18.90 gm liquid glucose
  • 60g unsalted butter, chilled, finely chopped
Instructions:
  • In a heatproof bowl, whisk together egg yolks and 2/3 cup caster sugar until pale yellow and slightly fluffy. In a saucepan, bring 2/3 cup cream and milk to a boil. Remove from heat and slowly whisk into the egg mixture.
  • Return the mixture to the pan and cook over medium-high heat while stirring constantly with a wooden spoon for 1 minute. Reduce the heat to medium and continue to cook and stir for 4 to 5 minutes, or until the mixture thickens enough to coat the back of a spoon (be careful not to let it boil).
  • Transfer the custard to a heatproof bowl placed in a larger bowl filled with ice water to cool, stirring occasionally. Blend bananas with half of the custard until smooth. Combine with the rest of the custard, then stir in vanilla, 1/4 teaspoon salt, and 1 cup cream. Strain the mixture through a sieve into a bowl, cover with plastic wrap, and refrigerate overnight. Chill a loaf pan in the freezer for 10 minutes. Process the mixture in an ice-cream maker following the manufacturer's instructions.
  • In a medium saucepan, combine water, liquid glucose, and remaining sugar. Simmer over medium heat, swirling the pan occasionally. Increase heat to high and continue swirling occasionally for 7 minutes until golden brown. Remove from heat, slowly stir in remaining cream, and add remaining salt. Simmer and stir the caramel for 1 minute. Transfer the pan to a bowl of iced water to cool slightly. Whisk in butter gradually until fully incorporated.
  • Layer one-third of the creamy ice-cream in the pan, generously drizzle with one-third of rich caramel, and delicately swirl with a wooden skewer. Repeat twice more to create tantalizing layers. Freeze overnight until perfectly set.
