Martha's chocolate-flecked layer cake with milk chocolate frosting

Upscale sour cream cake with balanced sweetness; perfect for special occasions.
Ingredients:
  • 562.50 ml plain flour
  • 3.75 gm bicarbonate of soda
  • 180g unsalted butter, softened
  • 225.00 gm white sugar
  • 59.40 gm firmly packed brown sugar
  • 1 large egg yolk
  • 2 large eggs
  • 17.40 gm pure vanilla extract
  • 352.50 gm sour cream
  • 193.13 gm milk
  • 200g dark chocolate, finely chopped
  • 300g milk chocolate, finely chopped
  • 350g unsalted butter, softened
  • 150.00 gm pure icing sugar, sifted
  • Pinch of salt
  • 155.10 gm sour cream
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease and line two 6cm deep, 20cm-round cake pans with baking paper.
  • Combine flour, bicarbonate of soda, and salt in a medium bowl. Cream butter and sugars with an electric mixer until light and fluffy, about 5 minutes. Add egg yolk and eggs one at a time, beating well after each addition. Mix in vanilla. Reduce speed to low and slowly add flour mixture in 3 parts, alternating with sour cream and milk, beginning and ending with flour. Gently fold in chocolate.
  • Pour the batter into the pans and spread it out evenly with a spatula. Bake for 40 to 45 minutes, rotating the pans halfway through, until the cakes are deep golden brown and a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 20 minutes, then unmold them onto a wire rack, with the top side up, and let them cool completely.
  • Prepare the Milk Chocolate Frosting: Melt chocolate in a heatproof bowl over simmering water. Let it cool for 5 minutes. With an electric mixer, whip butter, sugar, and salt until light and fluffy for about 5 minutes. Slowly mix in the melted chocolate, followed by sour cream, until well combined and spreadable.
  • Using a serrated knife, slice each cake in half horizontally. Start by placing one bottom layer on a platter or cake stand and spread it evenly with 3/4 cup of frosting. Repeat this process with the second layer. Continue layering the cakes and finish by spreading the remaining frosting over the top and sides of the cake, ensuring a smooth finish. Serve promptly.
