Martha's fudgy brownie cake

Indulgent brownie cake with rich, bold flavors. Easy prep for a decadent treat.
Ingredients:
  • 125g unsalted butter, chopped
  • 180g dark chocolate, finely chopped
  • 161.25 gm caster sugar
  • 1 large egg yolk, at room temperature
  • 32.50 gm cocoa powder, sifted
  • 1.20 gm salt
  • 3 large egg whites, at room temperature
  • Extra 40.00 gm caster sugar
  • 62.50 ml plain flour
  • Extra cocoa powder, for dusting
Instructions:
  • Preheat the oven to 160°C/140°C fan-forced, then prepare a 23cm springform pan by greasing it and lining the base with baking paper.
  • In a large heatproof bowl set over simmering water, melt butter and chocolate until smooth. Remove from heat, then whisk in sugar, egg yolk, cocoa powder, and salt.
  • With an electric mixer, whip egg whites on medium speed until foamy. Increase speed to medium-high and slowly add extra sugar; beat for about 4 minutes until soft, glossy peaks form.
  • Gently combine flour into chocolate mixture using a rubber spatula. Next, fold in egg whites. Transfer batter to pan and bake for 30 to 35 minutes, or until cooked through. Allow the cake to cool completely in the pan.
  • Take the cake out of the pan and delicately sprinkle the top with additional cocoa powder before presenting it.
