Martha's molten bittersweet chocolate cake

Indulge in Martha Stewart's decadent warm chocolate cakes with a luscious gooey center.
Ingredients:
  • 185g butter, chopped
  • 160g dark chocolate, chopped
  • 5 large eggs, at room temperature
  • 161.25 gm caster sugar
  • 125.00 ml plain flour
  • Pinch of salt
Instructions:
  • Prepare eight ramekins by greasing and flouring them, each measuring 5cm deep and holding 3/4 cup.
  • In a saucepan over gentle heat, melt the butter and chocolate together until velvety smooth, stirring constantly.
  • In a bowl, vigorously whisk together eggs and sugar until the mixture is pale and thick, about 4 minutes. Then, sift flour and salt into a separate bowl.
  • Gently mix the egg mixture into the chocolate mixture until combined. Stir in the flour. Fill the prepared ramekins evenly until 3/4 full. Arrange on a baking tray. Chill in the refrigerator for at least 1 hour (refer to note).
  • Preheat your oven to 200C/180C fan-forced. Bake the cakes on a tray for 12 to 14 minutes until just set. Allow them to stand for 3 minutes, then turn them onto serving plates and enjoy right away.
