Martha's New York-style crumb cake

Delicious New York coffee shop classic with large, crisp crumbs.
Ingredients:
  • 625.00 ml plain flour
  • 582.50 ml plain flour
  • 107.50 gm caster sugar
  • 90.00 gm firmly packed dark brown sugar
  • 2.50 gm ground cinnamon
  • 210g butter, melted
  • 1.25 gm bicarbonate of soda
  • 185g butter, softened
  • 215.00 gm caster sugar
  • 2 large eggs
  • 2 large egg yolks
  • 4.40 gm vanilla extract
  • 171.60 gm buttermilk
  • Icing sugar mixture, for dusting
Instructions:
  • Prepare the Crumb topping by mixing flour, sugars, and cinnamon in a bowl. Drizzle warm melted butter over the mixture and use your hands to create medium-sized clumps.
  • Preheat your oven to 170C/150C fan-forced, then grease and line a 5cm-deep, 23cm x 33cm baking pan.
  • Prepare Cake: In a large bowl, sift flour and bicarbonate of soda. Using an electric mixer, cream together butter and sugar until light and fluffy. Add eggs and egg yolks one by one, beating well after each addition. Mix in vanilla. Gradually add flour mixture and buttermilk in alternating batches, beating until fully incorporated.
  • Pour the batter into the pan and spread it evenly with a spatula. Sprinkle the crumb topping over the batter.
  • Bake the cake for an hour or until a skewer comes out clean when inserted into the center. Allow it to cool in the pan for 15 minutes, then transfer to a wire rack, top-side up. Dust with icing sugar and enjoy warm or cold, cut into squares.
