Indulgent, fudgy chocolate cookies that melt in your mouth.
Ingredients:
  • 200g dark chocolate, roughly chopped
  • 60g unsalted butter
  • 165.00 ml plain flour
  • 2.00 gm baking powder
  • 1.20 gm salt
  • 2 large eggs
  • 135.00 gm firmly packed brown sugar
  • 4.40 gm vanilla extract
  • Extra 350g dark chocolate, chopped
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease and line 4 large baking trays with baking paper.
  • Microwave the chopped chocolate and butter in a microwave-safe bowl in 20-second intervals until just melted. Be careful not to overheat. In a separate bowl, whisk together the flour, baking powder, and salt.
  • Whip eggs, brown sugar, and vanilla on high until fluffy. Switch to low speed and incorporate melted chocolate. Gently blend in flour mixture just until combined. Fold in extra chocolate.
  • Scoop dough onto trays, 5cm apart. Bake in two batches for 12-15 minutes, rotating trays halfway. Let cookies cool on trays for 10 minutes, then transfer to wire rack to cool completely. Serve and enjoy!
