Indulge in chocolate cookies with a gooey marshmallow center.
Ingredients:
  • 437.50 ml plain flour
  • 97.50 gm cocoa powder, sifted
  • 1.25 gm bicarbonate of soda
  • 1.20 gm salt
  • 125g butter, softened
  • 215.00 gm caster sugar
  • 1 large egg
  • 128.75 gm milk
  • 4.40 gm vanilla extract
  • 12 vanilla marshmallows, halved horizontally
  • 300.00 gm icing sugar mixture, sifted
  • 32.50 gm cocoa powder, sifted
  • 75g butter, melted, cooled
  • 64.38 gm milk
  • 1.10 gm vanilla extract
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and grease 2 large baking trays. Line them with baking paper. In a large bowl, whisk together the flour, cocoa, bicarbonate of soda, and salt.
  • In an electric mixer, whip butter and sugar until fluffy. Incorporate egg, milk, and vanilla. Mix until fully blended. Gradually add flour mixture and mix on low speed until combined.
  • Scoop level tablespoons of dough onto baking trays spaced 5cm apart. Bake one tray at a time for 8 to 10 minutes until cookies begin to spread and firm up. Take out of the oven. Press one marshmallow half, cut-side down, onto each cookie gently. Put tray back in the oven. Bake for an additional 2 minutes until marshmallows start to melt. Let them sit on the trays for 2 minutes. Move cookies to a wire rack to cool completely. Repeat with the other tray.
  • Prepare the Chocolate frosting: Combine icing sugar and cocoa powder in a medium bowl. Mix in butter, followed by milk and vanilla. Whisk until the frosting is smooth and easily spreadable, adding extra milk if necessary.
  • Cover each marshmallow generously with a dollop of frosting, ensuring smooth and even coverage. Let it stand for about an hour until the frosting sets slightly.
