Kids will love these adorable peanut butter and jelly "sandwich" treats made with cake and sticky treacle.
Ingredients:
  • 500.00 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 170g unsalted butter, softened
  • 195.00 gm smooth peanut butter (see note)
  • 107.50 gm caster sugar
  • 90.00 gm firmly packed brown sugar
  • 1 large egg yolk
  • 83.13 gm treacle
  • 330.00 gm strawberry jam
Instructions:
  • In a medium bowl, mix flour, bicarbonate of soda, and salt using a whisk. In a separate bowl, use an electric mixer to blend butter, peanut butter, and sugars until light and fluffy. Incorporate egg and yolk, then mix on low speed while gradually adding the flour mixture until just combined.
  • Take out 2 1/2 cups of dough, divide it in half, and shape each half into discs. Wrap them in plastic wrap and chill for 4 hours or until firm. In an electric mixer, mix treacle with the remaining dough on low speed until combined. Transfer the mixture to a piping bag fitted with a 5mm plain round nozzle.
  • Flatten 1 portion of plain dough to a 5mm thick, 22 x 26cm rectangle between 2 sheets of baking paper. Place the dough on a baking tray and freeze for 10 minutes until firm. Repeat with the second portion of dough.
  • Preheat the oven to 180°C/160°C fan-forced. Cut the dough into 10 squares measuring 6cm each. Arrange them 3cm apart on baking trays lined with baking paper. Pipe treacle dough around the edges to create a 'crust'. Using a small knife, score diagonally across the squares, being cautious not to cut all the way through. Chill in the freezer for 15 minutes or until firm.
  • Bake the biscuits for 15 to 18 minutes until they are a beautiful pale golden color. Let them cool slightly on wire racks. Gently cut each cookie along the score line. Spread 1 teaspoon of jam on half of the cookies and top with the remaining cookies to create sandwich cookies. Arrange them on a serving plate.
