Coconut-pecan balls dipped in chocolate, a festive holiday gift.
Ingredients:
  • 1 cup margarine
  • 4 cups confectioners' sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups shredded coconut
  • 2 cups chopped pecans
  • 2 teaspoons vanilla extract
  • 2 cups semisweet chocolate chips
Instructions:
  • Combine velvety margarine, sweet confectioners' sugar, and creamy condensed milk in a spacious mixing bowl. Incorporate coconut, rich pecans, and fragrant vanilla; blend thoroughly with a robust spoon. Refrigerate until solid enough to shape, approximately 30 minutes.
  • Roll the mixture into small balls and place them on cookie sheets lined with wax paper. Refrigerate until very firm, for at least 2 hours.
  • Melt the chocolate chips in a double boiler over simmering water, then dip each ball into the melted chocolate using a toothpick. Allow the balls to cool on wax paper.
