Wholesome gluten-free crackers packed with quinoa, brown rice, and seeds, inspired by Mary's Gone Crackers.
Ingredients:
  • 1 cup cooked brown rice
  • 1 cup cooked quinoa
  • 2 teaspoons tamari (gluten-free soy sauce)
  • 1 tablespoon water, or as needed
  • 0.25 cup chia seeds
  • 0.25 cup sesame seeds
  • 0.25 cup flax seeds
  • salt to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Cut a small square out of another piece of parchment paper, oil one side, and set it aside.
  • Combine brown rice, quinoa, and tamari in a food processor. If the mixture seems dry, add water until a dough begins to come together. Add chia seeds, sesame seeds, flax seeds, and salt; pulse until the dough forms a sticky ball.
  • Roll small pieces of dough into 1/2-inch balls and space them at least 2 1/2 inches apart on the baking sheet. Place an oiled square of parchment paper, oil-side down, on top of a dough ball. Flatten the dough into a thin 2-inch-wide disk by pressing a small jar onto the parchment. Repeat with the rest of the dough balls.
  • Bake in the preheated oven until edges of crackers begin to brown, about 10-12 minutes. Transfer the crackers to a wire rack set on a baking sheet and return to the oven.
  • Continue baking until the crackers are perfectly crispy, for an additional 2 to 3 minutes.
