Mary's Mexican Ranchero Salsa

Authentic Mexican ranchero salsa: perfect for topping scrambled eggs or any dish!
Ingredients:
  • 3 tablespoons corn oil
  • 3 medium ripe tomatoes
  • 5 medium jalapeno peppers, stemmed
  • 1 medium onion, diced
  • 1 cup water
  • salt to taste
Instructions:
  • In a medium skillet over medium heat, heat oil, then sear whole tomatoes and jalapenos, turning every 2 minutes, until all sides are charred. Remove from heat.
  • Carefully blend tomatoes and jalapenos until smooth.
  • Sautee the onion in the skillet until translucent, for about 5 minutes. Stir in the tomato-jalapeno puree and water, then bring to a simmer. Cook until thickened, approximately 5 minutes. Season with salt and serve while warm.
