Pecan-crusted chicken with a hint of cinnamon for a crispy and flavorful twist.
Ingredients:
  • 2 eggs
  • 0.25 cup milk
  • 0.5 cup all-purpose flour
  • 1 tablespoon poultry seasoning
  • 1.5 tablespoons ground cinnamon
  • 1 cup chopped pecans
  • 1 pinch white sugar
  • salt to taste
  • ground black pepper to taste
  • 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
Instructions:
  • Combine the eggs and milk in a small bowl, then set aside.
  • Combine the flour, seasoning, cinnamon, pecans, sugar, and salt and pepper in a medium bowl.
  • Coat the chicken in the egg mixture, then firmly press into the pecan mixture.
  • Fry pecans in hot olive oil until they turn golden brown, approximately 5 minutes on each side. Be mindful not to let them burn. Transfer to a paper towel to drain excess oil.
