Fluffy sweet cornbread made with baking mix, cornmeal, and corn kernels. Perfect side for any meal.
Ingredients:
  • 3 cups biscuit baking mix
  • 1 cup white sugar
  • 2.5 teaspoons baking powder
  • 0.5 cup yellow cornmeal
  • 3 eggs
  • 1.25 cups milk
  • 1 cup butter, melted
  • 2 cups frozen corn kernels, thawed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking pan.
  • 1. In a large mixing bowl, mix together baking mix, sugar, baking powder, and cornmeal. In another bowl, whisk eggs, milk, and melted butter until smooth. Combine with dry ingredients. Gently fold in frozen corn if desired. Transfer batter to prepared pan.
  • Place the loaf in the oven and let it bake until a toothpick inserted into the center comes out clean. Serve the bread warm.
