Make creamy cheese-filled crepes using a blender. Pan-fry until golden and delicious.
Ingredients:
  • 1 cup water
  • 0.75 cup milk
  • 3 eggs
  • 5 tablespoons melted butter
  • 0.5 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1 (16 ounce) package cottage cheese
  • 1 (8 ounce) package farmers cheese
  • 0.25 cup sour cream
  • 1 pinch salt
  • 2 tablespoons butter, or as needed
Instructions:
  • Combine water, milk, eggs, melted butter, salt, vanilla extract, and flour in a blender. Blend until smooth, for about 1 minute. Transfer the batter to a bowl and refrigerate for at least 1 hour.
  • First, thoroughly wash the blender. Next, combine cottage cheese, farmers cheese, sour cream, sugar, 1 teaspoon of vanilla extract, and 1 pinch of salt in the blender. Pulse the mixture until well combined, then blend until smooth for about 2 minutes.
  • Heat 1 teaspoon of butter in an 8-inch skillet over medium heat until melted. Pour 2 tablespoons of batter into the skillet, swirl to coat the bottom, and cook for 1 to 2 minutes until the crepe is opaque and set. Transfer the cooked crepe to a plate lined with wax paper, uncooked side down. Repeat with the remaining batter, adding more butter to the pan as needed.
  • Lay the crepe cooked side up on a work surface. Add 1 1/2 tablespoons of cheese filling 1 1/2 inches from the top. Fold the top edge over the filling, then fold the sides inwards to fully encase the cheese. Roll it up tightly to seal the filling, creating a neat filled roll.
  • Heat a touch of butter in a skillet over medium-low heat. Pan fry the blintzes until the filling is heated through and both sides are golden brown, for about 1 to 2 minutes per side.
