Masala-Spiced Roast Chicken

Spiced with garam masala and zesty lime, this roast chicken is bursting with Indian flavors.
Ingredients:
  • 1 (3 pound) whole chicken, giblets removed
  • 10 cloves garlic
  • 0.25 cup garam masala
  • 1 lime
Instructions:
  • Preheat oven to 425°F (220°C) for a perfectly warm baking environment.
  • Position the chicken vertically on a rack in a roasting pan. Create 10 slits in the skin with a sharp knife and gently insert a garlic clove into each one. Coat the entire chicken with masala powder and drizzle lime juice over it. Flip the chicken over, breast side down, and place the lime rind inside the cavity.
  • Place the chicken in the preheated oven and roast for 20 minutes. Then, reduce the oven temperature to 350 degrees F (175 degrees C) and continue baking for about 45 minutes until the chicken is no longer pink at the bone and the juices run clear. An instant-read thermometer inserted into the thickest part of the thigh should register 180 degrees F (82 degrees C). Once done, take the chicken out of the oven, cover it with aluminum foil, and let it rest in a warm area for 10 minutes before slicing.
