Thanksgiving side: Butternut squash baked and mashed with creamy butter, tangy sour cream, and a touch of sweet brown sugar.
Ingredients:
  • 2 butternut squash, halved and seeded
  • 1 cup water, or as needed
  • 0.75 cup sour cream
  • 0.5 cup butter
  • 1 tablespoon brown sugar
  • salt and ground black pepper to taste
  • 2 sprigs fresh parsley, or as desired
  • 1 tablespoon sour cream
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Use a small knife to pierce the skin of the butternut squash and place it cut-side down in a baking dish, adding enough water to reach a depth of 1/2 inch. Cover the dish with aluminum foil.
  • Roast in the oven until the squash is soft and fork-tender, approximately 1 hour.
  • Transfer the squash into a bowl and combine with 3/4 cup of sour cream, butter, brown sugar, cinnamon, salt, and pepper. Use a potato masher or fork to blend everything until smooth. Finish by topping it off with parsley and 1 tablespoon of sour cream.
