Massaman paste for Massaman beef curry

Transform your curries with this homemade, authentic curry paste!
Ingredients:
  • 8 dried long red chillies, deseeded
  • 6.10 gm shrimp paste
  • 2 tsp coriander
  • 5.00 gm ground cumin
  • 2.50 gm ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp ground white pepper
  • 1 brown onion, chopped
  • 3 garlic cloves, chopped
  • 1 stem lemon grass, trimmed, white part chopped
  • 3cm piece galangal, peeled, chopped
Instructions:
  • 1. In a heatproof bowl, submerge the chillies in boiling water and let them soften for about 20 minutes. Drain and roughly chop. 2. Wrap the shrimp paste in foil and roast it in a frying pan over medium heat for 2 to 3 minutes on each side.
  • Create a flavorful paste by blending chillies, roasted shrimp paste, coriander, cumin, cinnamon, cloves, white pepper, and 1 tablespoon cold water until smooth. Gradually add each remaining ingredient while blending until a thick paste forms. Transfer the paste to a clean, airtight jar and refrigerate for up to 6 months.
