Persian beet yogurt dish - Mast-o-Laboo.
Ingredients:
  • 1 pinch white sugar, or to taste
  • 2 beets, peeled
  • 1 cup plain yogurt
  • 1 pinch salt
Instructions:
  • Bring a saucepan of water to a boil. Dissolve sugar into the boiling water. Boil beets until tender, approximately 45 minutes. Drain and cool beets completely.
  • Dice the cooled beets into 1/2-inch cubes. Set aside 1/2 cup of the diced beets for now, saving the rest for later.
  • Combine yogurt and beets in a bowl; season with salt to taste.
