Matar Pulao (Rice with Peas)

"Simple Basmati rice dish infused with fragrant green peas - a mild and aromatic delight, also known as 'Matar' in Urdu."
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 whole cloves
  • 3 black cardamom seeds
  • 6 whole black peppercorns
  • 2 (3 inch) cinnamon sticks
  • 2 teaspoons garlic powder
  • 2 tablespoons water
  • 1 cup frozen green peas, thawed
  • 2 cups uncooked basmati rice, rinsed and drained
  • 4 cups water
  • salt to taste
Instructions:
  • Warm the oil in a deep heavy skillet over gentle heat. Add cloves, cardamom seeds, peppercorns, and cinnamon sticks, and cook briefly to release their fragrance. Combine garlic powder and 2 tablespoons of water to form a paste, then incorporate it into the pan with the spices.
  • Toss in the green peas, cover the pan, and let them cook for 5 minutes.
  • Pour in the remaining 4 cups of water along with the rice. Add a pinch of salt for seasoning. Allow it to come to a boil. Once boiling, cover the pan and simmer for approximately 15 minutes until the rice is tender and the water is absorbed. Adjust salt to taste before serving.
