Coconut and oat bars layered with tangy rhubarb jam - a simple and delicious treat.
Ingredients:
0.625 cupbutter
1cup packed brown sugar
1cuprolled oats
1cupflaked coconut
0.5 cuprhubarb jam
Instructions:
Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 10-inch round cake pan.
Combine butter, brown sugar, flour, oatmeal, coconut, egg, and baking soda in a bowl and mix until well combined. Spread 2/3 of the batter in the prepared pan, top with rhubarb jam, and cover with the remaining dough.
Bake in a preheated oven until a toothpick inserted in the center comes out clean, about 35 to 45 minutes.
