Flavorful pesto pasta salad - a versatile side or light meal, ideal for picnics and lunches.
Ingredients:
  • 1 (16 ounce) package corkscrew-shaped pasta (fusilli)
  • 0.75 cup chopped fresh basil
  • 0.75 cup shredded Parmesan cheese
  • 0.33333334326744 cup pine nuts
  • 0.33333334326744 cup extra-virgin olive oil
  • 1 clove garlic, diced
  • 0.5 cup finely diced red onion
  • 0.5 cup finely diced radicchio
  • 1 tablespoon mayonnaise, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Boil a large pot of gently salted water. Add fusilli and cook until al dente, about 12 minutes. Drain and set aside.
  • In a food processor, mix fresh basil leaves, grated Parmesan cheese, pine nuts, olive oil, and garlic until you have a smooth pesto sauce.
  • Combine pasta with vibrant pesto, incorporating the bold flavors of red onion, radicchio, and creamy mayonnaise. Enhance with a sprinkle of salt and pepper before chilling for a minimum of 30 minutes prior to presentation.
