Flavorful pesto pasta salad - a versatile side or light meal, ideal for picnics and lunches.
Ingredients:
1 (16 ounce) packagecorkscrew-shaped pasta (fusilli)
0.75 cupchoppedfresh basil
0.75 cupshreddedParmesan cheese
0.33333334326744 cuppine nuts
0.33333334326744 cupextra-virgin olive oil
1clovegarlic, diced
0.5 cupfinely dicedred onion
0.5 cupfinely dicedradicchio
1tablespoonmayonnaise, or to taste
salt and ground black pepper to taste
Instructions:
Boil a large pot of gently salted water. Add fusilli and cook until al dente, about 12 minutes. Drain and set aside.
In a food processor, mix fresh basil leaves, grated Parmesan cheese, pine nuts, olive oil, and garlic until you have a smooth pesto sauce.
Combine pasta with vibrant pesto, incorporating the bold flavors of red onion, radicchio, and creamy mayonnaise. Enhance with a sprinkle of salt and pepper before chilling for a minimum of 30 minutes prior to presentation.
