Meatballs with carrot & spinach

Ingredients:
  • 300g lean beef mince
  • 45g (1/2 cup) fresh breadcrumbs, from day-old bread
  • 70g (1/2 cup) finely grated carrot
  • 30g (1/2 cup) finely chopped baby spinach leaves
  • 1/2 small brown onion, grated
  • 20.00 ml finely grated parmesan
  • Ground white pepper
Instructions:
  • In a bowl, mix together the beef mince, breadcrumbs, carrot, spinach, onion, milk, and Parmesan until evenly combined. Season with pepper to taste.
  • Form the mixture into small walnut-sized balls and arrange them on a plate.
  • In a large non-stick frying pan over medium heat, heat the oil. Cook the meatballs, turning often, for 5-6 minutes until browned and cooked through. Serve warm.
