Try a zesty Mexican twist on classic lasagna with layers of tortillas, beans, cheese, and salsa.
Ingredients:
  • 1 (16 ounce) jar salsa
  • cooking spray
  • 1 medium yellow squash, grated
  • 0.25 cup finely chopped onion
  • 1 (16 ounce) can vegetarian refried beans
  • 4 (10 inch) whole wheat tortillas
  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 1 cup cottage cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375°F (190°C) and lightly coat a 9-inch square baking dish with cooking spray.
  • In a skillet coated with cooking spray, sauté squash and onion over medium heat until softened, about 3 to 5 minutes. Stir in refried beans and cook until heated through, approximately 3 minutes. Remove from heat.
  • Layer the ingredients in the prepared baking dish by starting with a tortilla, followed by refried bean mixture, black beans, cottage cheese, mozzarella cheese, Cheddar cheese, and salsa, repeating this process 3 more times. Use 1/4 of the ingredients for each layer.
  • Bake until golden and bubbling, about 20-25 minutes in the preheated oven.
