"Cod-stuffed bell peppers bursting with Mediterranean flair from olives, feta cheese, and fresh oregano."
Ingredients:
  • 1 medium lemon, halved crosswise
  • 1 (1 pound) fillet cod, cut into 1/2-inch cubes
  • 1 (8 ounce) package crumbled feta cheese
  • 1 medium bell pepper, diced
  • 1 small zucchini, cut in quarters lengthwise and then crosswise into thin slices
  • 1 small red onion, diced
  • 0.5 cup halved Kalamata olives
  • 0.5 cup halved green olives
  • 2 tablespoons chopped fresh oregano
  • salt and ground black pepper to taste
  • 1 tablespoon olive oil
  • 4 medium bell peppers, tops cut off and seeded
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Slice one half of a fresh lemon into thin 1/4-inch slices, making sure to remove any rind. Then quarter each slice. Juice the other half of the lemon.
  • In a mixing bowl, toss together cod, feta cheese, diced bell pepper, zucchini, onion, Kalamata and green olives, and lemon slices. Season with oregano, salt, and pepper. Drizzle with lemon juice and olive oil, gently mixing to coat everything evenly.
  • Fill the peppers with the cod mixture, then tightly wrap them all in heavy-duty aluminum foil to seal in the flavors.
  • Roast in the oven until peppers are soft and cod is fully cooked, approximately 45 minutes. Rest outside the oven for 5 minutes prior to serving.
