Bourbon-infused whiskey balls with vanilla wafer and pecan, coated in sweet confectioners' sugar and coconut for a delightful treat.
Ingredients:
  • 1 (12 ounce) package vanilla wafer cookies
  • 8 ounces pecans
  • 1 cup confectioners' sugar
  • 0.5 cup bourbon whiskey
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons light corn syrup
  • 0.5 cup flaked coconut, or to taste
  • 0.25 cup confectioners' sugar, or to taste, for rolling
Instructions:
  • Pulse cookies in a food processor until finely ground; then transfer to a large bowl.
  • In a food processor, finely grind pecans. Transfer the ground pecans to a mixing bowl with cookie crumbs. Add confectioners' sugar, bourbon whiskey, cocoa powder, and corn syrup. Mix until the mixture holds together, then shape into 3/4-inch balls.
  • *Spread a layer of coconut onto one plate and evenly distribute 1/4 cup of confectioners' sugar onto another plate. Roll the balls in the coconut and sugar mixture until fully coated. Place the coated balls on a serving platter, cover with plastic wrap, and chill in the refrigerator until firm, for at least 1 hour.*
