Ingredients:
4onions, roughly chopped, or more to taste
3stalkscelery, roughly chopped
1cupslicedfresh mushrooms
5tablespoons mincedgarlic
3 (900 ml) cartons chicken broth, divided
3 (12 ounce) canstomato paste
0.5 cupdried oregano
0.25 cupgroundblack pepper, or more to taste
0.25 cupwhite sugar
3tablespoons celery salt
2teaspoons basil
2teaspoons onion powder
2teaspoons seasoned salt
1.5 cups vegetable oil
0.5 cupall-purpose flour
Instructions:
In small batches, blend onions, celery, mushrooms, and garlic with 1/4 cup of chicken broth in a food processor until velvety, adding extra broth as needed.
Combine the vegetable puree and the rest of the chicken broth in a large pot. Bring to a boil, then lower the heat and simmer for about 45 minutes until the flavors meld together perfectly.
Whisk together tomato paste, oregano, black pepper, sugar, celery salt, basil, onion powder, and seasoned salt with the broth; bring to a boil, then lower heat and simmer for 45 minutes to meld flavors.
Combine oil and flour into the tomato mixture, whisking until the pizza sauce is velvety smooth.
