Sweet vinaigrette enhances black-eyed pea salad with fresh vegetables, ideal for marinating overnight.
Ingredients:
  • 1.5 cups canned black-eyed peas, rinsed and drained
  • 0.75 cup diced green bell pepper
  • 0.5 cup diced celery
  • 0.5 cup diced red onion
  • 0.25 cup diced yellow onion
  • 0.25 cup vegetable oil
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon hot pepper sauce
Instructions:
  • In a large bowl, mix together black-eyed peas, green bell pepper, celery, red onion, and yellow onion for a flavorful combination.
  • Combine vegetable oil, sugar, cider vinegar, minced garlic, salt, black pepper, and hot pepper sauce, whisking vigorously in a bowl until well blended.
