Vintage lace cookies with a delightful blend of ginger and molasses, a timeless treat from WWI.
Ingredients:
  • 2 cups white sugar
  • 1.5 cups shortening
  • 0.5 cup molasses
  • 2 eggs
  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 tablespoons white sugar, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) to get it nice and toasty for your upcoming culinary masterpiece.
  • Cream together 2 cups of sugar, shortening, and molasses in a bowl with an electric stand mixer until well combined, being careful not to overmix. Incorporate eggs and mix for 30 seconds.
  • Combine flour, baking soda, cinnamon, ginger, and salt in a separate bowl. Mix with sugar mixture until dough is just combined and stiff.
  • In a shallow bowl, sprinkle 2 tablespoons of sugar. Shape cookie dough into 1-inch balls, coat them with sugar without flattening, and place them on ungreased cookie sheets.
  • Bake in the preheated oven for 6 to 8 minutes until cookies crackle on top to create a 'lace' design. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
