Savory green chile beef stew with potatoes, perfect pairing with fresh homemade tortillas!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 5 medium potatoes, peeled and cubed
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 cup chopped green chile peppers
  • 0.5 cup chopped onion
  • 2 cups water
  • salt and ground black pepper to taste
Instructions:
  • In a large stockpot over medium-high heat, heat oil. Add beef and cook, stirring often, until nicely browned, about 7 to 10 minutes. Remove and discard excess grease.
  • Place the pot back on the stove and combine the potatoes, tomatoes, chile peppers, and onion with the beef. Pour in water, mix well, and bring everything to a boil. Simmer on low heat for about 1 hour until the flavors meld together.
  • Before serving, generously season with salt and pepper to enhance the flavors.
