Delicious corn fritters with Parmesan cheese, fried in butter using biscuit mix.
Ingredients:
  • 5 tablespoons biscuit baking mix (such as Bisquick®)
  • 0.25 teaspoon salt
  • ground black pepper to taste
  • 0.66666668653488 cup shredded Parmesan cheese
  • 2 cups whole kernel corn, drained
  • 2 tablespoons finely chopped onion
  • 0.25 cup butter
  • 2 tablespoons vegetable oil
Instructions:
  • Combine baking mix, salt, black pepper, and Parmesan cheese, and whisk together in a small bowl. In a separate bowl, beat eggs and mix in corn and onion. Gently fold in the biscuit mix-cheese mixture into the corn mixture until just combined; avoid overmixing.
  • In a large skillet over medium heat, combine butter and vegetable oil until melted. Use a tablespoon to drop batter into the hot skillet, then gently flatten fritters with a spoon. Cook until both sides are golden brown, about 3 minutes per side. Drain cooked fritters on paper towels.
