Turkish-style eggs with tomatoes, peppers, chiles, and feta - a flavorful meal for any time of day.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 0.25 cup chopped onion
  • 2 tablespoons diced red bell pepper
  • 2 tablespoons diced Aleppo chiles, or to taste
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon minced garlic
  • 0.25 cup chopped tomato
  • salt and ground black pepper to taste
  • 3 large eggs, beaten
  • 1 tablespoon thinly sliced basil leaves
  • 1 tablespoon crumbled feta cheese
Instructions:
  • In a skillet over medium heat, sauté onions, bell pepper, chiles, and red pepper flakes in olive oil until onions are soft, about 5-6 minutes. Stir in garlic and cook for another minute until fragrant. Add tomatoes with their juices, season with salt and pepper, and cook until tomatoes are softened, approximately 4-6 minutes.
  • Add eggs to the skillet, swirling gently to cover the entire surface. Allow eggs to cook undisturbed until set, for 3 to 5 minutes.
  • Garnish with fresh basil and crumbled feta cheese.
