Silky Swiss meringue buttercream: perfectly balanced, elegantly pipes.
Ingredients:
  • 8 egg whites
  • 1.5 cups white sugar
  • 1.25 pounds unsalted butter, at room temperature
  • 2 teaspoons vanilla extract
Instructions:
  • In a heat-safe bowl, whisk together egg whites and sugar. Place the bowl over a pot of simmering water. Whip the mixture until it reaches 120 degrees F (49 degrees C) on a digital thermometer and the sugar is dissolved, approximately 5 minutes.
  • Take the egg white mixture off the heat and whip it until soft peaks form and the meringue temperature decreases to 99°F (37°C) or below, which should take 4 to 7 minutes.
  • Incorporate butter into the meringue gradually, 2 tablespoons at a time, whipping until fluffy. Scrape the bowl sides and mix until smooth, for 5 to 8 minutes. Then, add vanilla extract and whip until fully incorporated.
