Boozy strawberry Pavlova - a modern twist on a classic dessert.
Ingredients:
  • 100g eggwhites (from about 3 eggs)
  • 20.00 ml white vinegar
  • 200g caster sugar, plus extra 2 tbsp
  • 500g strawberries, sliced if large
  • 60ml vodka
  • 20.00 ml lemon zest, plus
  • 42.00 gm lemon juice
  • 2 tsp balsamic glaze (see notes)
  • 1/2 vanilla bean, split, seeds scraped
  • Raspberry ripple ice cream, to serve
Instructions:
  • Preheat your oven to 110°C and prepare a baking tray with parchment paper. In a saucepan over low heat, combine egg whites, vinegar, 200g sugar, and a pinch of salt. Stir for 1-2 minutes until the sugar dissolves (make sure the temperature stays below 37°C using a sugar thermometer). Using electric beaters, whisk the mixture until stiff and glossy. Spread the meringue on the prepared tray and bake for 1 1/2 hours or until crisp.
  • Next, combine strawberries, vodka, lemon zest and juice, balsamic glaze, vanilla pod and seeds, remaining 2 tablespoons of sugar, and a pinch of freshly ground black pepper in a bowl. Gently toss everything together and refrigerate for 30 minutes to allow the flavors to meld.
  • To present this delicious dessert, crumble the meringue onto a platter. Add a scoop of ice cream on top and generously spoon over the berries along with the soaking liquid.
