Classic Louisiana shrimp gumbo with browned chicken, served over rice. Cooking tip: Add file off the heat to avoid stringiness. File is ground sassafras leaves, found in most supermarkets. Enjoy the flavors of Cajun country in every bite!
Ingredients:
  • 1 pound smoked sausage, cut into 1/4 inch rounds
  • 1 (4 pound) chicken, cut into parts
  • 0.66666668653488 cup all-purpose flour
  • 2 cups chopped onion
  • 0.5 cup chopped green onions
  • 0.66666668653488 cup green bell pepper, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon minced garlic
  • 2 pounds medium shrimp - peeled and deveined
  • 8 cups water
  • salt to taste
  • ground black pepper to taste
  • 0.125 teaspoon cayenne pepper
  • 2 bay leaves
  • file powder
Instructions:
  • In a medium skillet, cook the sausage until nicely browned. Transfer to paper towels to absorb excess fat. Discard any remaining fat in the pan.
  • Heat vegetable oil in a large skillet over high heat. Brown chicken pieces until golden brown on all sides. Transfer chicken to a dish, keeping warm.
  • Whisk flour into hot vegetable oil to create a roux. Reduce heat to low and cook the mixture, stirring constantly, until it turns a rich dark brown color, which should take around 30 to 45 minutes for optimal flavor in the gumbo.
  • Once the roux turns a rich brown hue, promptly toss in the sausage, onion, green onion tops, green pepper, parsley, and garlic. Simmer on low heat until the veggies soften, approximately 10 minutes, stirring continuously.
  • Combine 2 cups of water and spices in a pot, then add chicken parts. Slowly pour in the remaining water. Bring the mixture to a boil, then lower heat and simmer for approximately 45 minutes until the chicken is cooked through and tender.
  • Transfer the chicken pieces for another dish. Introduce shrimp to the gumbo and simmer for 8 to 10 minutes. Discard the bay leaves. Season to taste. Serve the flavorful gumbo in deep bowls, sprinkle file powder over each serving, and stir it in.
