Whip up a quick and delicious Mexican chicken soup for a family-approved weeknight dinner.
Ingredients:
  • 2 Australian Chicken Breast Fillets
  • 500ml chicken stock
  • 425g can Mexican-style beans
  • 400g can diced tomatoes
  • 160g corn cob
Instructions:
  • In a large saucepan, gently nestle the chicken and cover with the flavorful stock. Bring to a boil over high heat, then reduce to low and gently simmer for 10 minutes until the chicken is fully cooked. Move the chicken to a heatproof bowl and let it cool slightly.
  • Finely shred the chicken using 2 forks. Add it back to the stock in the pan with the beans and tomato. Increase the heat to medium and simmer for 10 minutes, or until the soup slightly thickens.
  • Incorporate the corn into the mixture and season to taste.
