Savor the bold flavors of Mexican chorizo sausage in a delicious breakfast pie with a crispy hash brown crust.
Ingredients:
  • 3 cups frozen shredded hash browns
  • 3 eggs, beaten, divided
  • 2 tablespoons minced onion
  • 1 tablespoon all-purpose flour
  • 1.5 tablespoons olive oil
  • 1 pound bulk Mexican chorizo sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 0.25 cup milk
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1.5 cups shredded Monterey Jack cheese
Instructions:
  • Preheat oven to 400 degrees F (200 degrees C) and generously grease a 9-inch pie pan.
  • In a bowl, mix together hash browns, 1 egg, minced onion, flour, and salt. Transfer the mixture into the pie pan, smoothing it down to create a crust.
  • Place in the preheated oven and bake for 30 minutes until golden. After that, brush the crust with olive oil and bake for an additional 10 minutes until set. Take out of the oven and then reduce the temperature to 350 degrees F (175 degrees C).
  • Preheat a large skillet over medium-high heat. Sear the chorizo until golden brown and crumbly, about 5 to 7 minutes. Add onions and garlic, saute for an additional 3 minutes. Optional: Drain excess grease from the skillet.
  • Whisk eggs and milk until smooth in a bowl, then stir in cilantro and cumin.
  • First, generously cover the potato crust with half of the delicious Monterey Jack cheese. Next, spoon the flavorful chorizo mixture on top of the cheese layer, and sprinkle the remaining Monterey Jack cheese over it. Finally, gently pour the egg mixture over the entire dish for a perfect finish.
  • Place the pie in the preheated oven and bake until the eggs are fully set and the top is beautifully golden brown, typically about 35 to 40 minutes. Serve the delicious creation warm and enjoy!
