Ingredients:
  • 1 cup quinoa
  • 2 cups water
  • 1 cup vacuum-packed whole kernel corn with red and green peppers, drained
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup coarsely chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon ground cumin
  • 4 cups spring mix baby salad greens
Instructions:
  • In a 1-quart saucepan, bring quinoa and water to a boil. Reduce heat, cover tightly, and simmer for 7 to 10 minutes until all liquid is absorbed. Quinoa is ready when grains are translucent with opaque edges.
  • Combine corn, tomatoes, onion, cilantro, lime juice, and cumin in a large bowl, gently mixing them together.
  • Mix the cooked quinoa into the salad. Serve by placing 1 cup of salad greens on each plate and topping them with the quinoa salad.
