Mexican sweetcorn and zucchini fritters

Mexican-style corn and zucchini fritters with creamy dipping sauce and lime for a quick and tasty dinner.
Ingredients:
  • 25g sachet Mexican-style seasoning
  • 300.00 gm self-raising flour
  • 321.88 gm milk
  • 1 large zucchini, grated
  • 420g can super sweet corn kernels, drained
  • Extra virgin olive oil, for shallow-frying
  • Fresh coriander sprigs, to serve
  • Lime wedges, to serve
  • 165.00 ml plain Greek-style yoghurt
  • 21.00 gm lime juice
Instructions:
  • Set aside 1 1/2 teaspoons of seasoning for the dipping sauce. Mix together flour and the rest of the seasoning in a bowl, creating a well. Pour in milk and eggs, then whisk until well combined. Fold in zucchini and corn, stirring until thoroughly mixed.
  • - Heat oil in a large frying pan until sizzling. - Pour 1/4 cup of batter into the pan, shaping it into a round shape. - Cook each fritter for 3 to 4 minutes on each side until golden and cooked through. - Drain on paper towel and continue with the remaining batter.
  • Mix together Greek yoghurt, the seasoning set aside earlier, and the freshly squeezed juice in a bowl to create the flavorful dipping sauce.
  • Present the fritters accompanied by a side of dipping sauce, fresh coriander, and lime wedges.
