Tender fava beans with onion, lemon juice, and dill--a Turkish meze delight.
Ingredients:
  • 3 tablespoons olive oil
  • 0.5 onion, chopped
  • 1.5 pounds fresh fava beans, shelled
  • 2 tablespoons water
  • 1 teaspoon all-purpose flour
  • 1 cup boiling water
  • 1 teaspoon lemon juice
  • 0.5 teaspoon white sugar
  • salt to taste
  • 0.5 cup chopped fresh dill
Instructions:
  • In a skillet over medium heat, sauté onions in oil until fragrant, about 1 minute. Add fava beans and cook until slightly tender, about 2 minutes.
  • Combine 2 tablespoons of water with flour in a bowl, then pour it into the fava bean mixture. Stir in 1 cup of water, lemon juice, sugar, and salt. Cover and bring to a boil; then simmer on low heat until fava beans are very tender, approximately 5 minutes.
  • Mix in the dill with the fava bean mixture and simmer for about 2 minutes until flavors meld. Allow to cool to room temperature.
