Renowned chef's zesty cucumber salad inspired by her grandfather's classic recipe.
Ingredients:
  • 2 large English cucumbers or 6 Persian cucumbers
  • ½ teaspoon kosher salt, plus more as needed
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 1 garlic clove, minced
  • ½ cup chopped fresh dill
  • Black pepper
Instructions:
  • Prepare the cucumbers: Trim the ends and halve lengthwise. Lay each half cut side down on a board and gently press with a wooden spoon handle until slightly smashed. Then, cut into 1-inch diagonal slices.
  • Add salt to the cucumbers in a large bowl, mix well, and let sit for 20 minutes.
  • Prepare the cucumbers: Drain excess liquid using a colander, then return to the bowl. Mix in vinegar, sugar, and garlic, toss well, and let marinate for 10 minutes.
  • Enhance with herbs and present: Incorporate the dill into the mixture until fully blended. Taste, and season with a pinch of salt and pepper before serving.
