Budget-friendly vegetarian lentil loaf made with cooked lentils, quick oats, Cheddar cheese, tomato sauce, onion, and spices.
Ingredients:
  • 2 cups water
  • 1 cup lentils
  • nonstick cooking spray
  • 1 cup quick-cooking oats
  • 1 small white onion, diced
  • 0.5 cup tomato sauce
  • 1 large egg, lightly beaten
  • 1 clove garlic, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 0.25 teaspoon ground black pepper
Instructions:
  • In a saucepan, bring water and salt to a boil. Cover, reduce heat to low, and simmer until lentils are soft and most of the water evaporates, about 30 minutes. Remove from heat.
  • Preheat the oven to 350 degrees F (175 degrees C and generously coat a loaf pan with cooking spray.
  • After draining, give the lentils a gentle mash before transferring to a mixing bowl. Combine with oats, Cheddar cheese, and onion. Incorporate tomato sauce, egg, garlic, parsley, basil, and pepper; mix thoroughly. Transfer the mixture to the loaf pan and level the top using the back of a spoon.
  • Bake until the top of the loaf is dry, firm, and golden brown, for 30 to 45 minutes in the preheated oven. Let it cool for 10 minutes on a wire rack, then run a sharp knife around the edges of the pan and invert onto a serving platter.
